- 4 cups frozen pineapple chunks
(If using fresh pineapple, freeze it first.) - 1 cup full-fat coconut milk
or whole milk, or pineapple juice for a lighter texture - 3 tbsp honey, sugar, or agave (adjust to taste)
- 1 tsp vanilla extract
- 1–2 tbsp lemon juice (optional, brightens flavor)
- Pinch of salt (optional, enhances sweetness)
🥣 Instructions
1. Freeze your pineapple (if needed)
Cut a fresh pineapple into chunks and freeze for 3–4 hours until solid.
If using store-bought frozen pineapple, skip this step.
2. Blend ingredients
In a high-power blender or food processor, add:
- Frozen pineapple
- Coconut milk (or milk/juice)
- Honey
- Vanilla
- Lemon juice (if using)
Blend on high, stopping to scrape down the sides as needed, until smooth, thick, and creamy.
If the mixture is too thick, add 1–2 tbsp liquid at a time until it blends.
3. Soft-serve texture
Once smooth, the mixture will be like soft serve.
For a swirl effect, spoon it into a piping bag with a star tip and pipe into bowls.
4. Serve immediately
Pineapple soft serve melts quickly — enjoy right away!
