🍗🧀 Cheesy Chicken Rolls

⭐ Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella (or provolone)
  • ½ cup cream cheese (softened)
  • ¼ cup grated Parmesan
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (or 1 tsp dried)
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil

🥣 Instructions

1. Prep the chicken

  • Preheat oven to 400°F (205°C).
  • Butterfly each chicken breast and gently pound to an even thickness (¼–½ inch).
  • Season both sides with salt, pepper, and paprika.

2. Make the cheese filling

In a bowl, mix:

  • Cream cheese
  • Mozzarella
  • Parmesan
  • Garlic
  • Parsley
  • Italian seasoning

3. Fill and roll

  • Spread a spoonful of the cheese mixture over each chicken breast.
  • Roll tightly from the narrower end and secure with toothpicks.
  • Brush the outside lightly with olive oil.

4. Sear (optional but best)

  • Heat a skillet over medium-high.
  • Sear chicken rolls for 1–2 minutes per side until lightly golden.

5. Bake

  • Transfer to a baking dish.
  • Bake 20–25 minutes, or until internal temperature reaches 165°F (74°C).

🥔 Herb-Roasted Potatoes

  • 1 ½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • ¾ tsp salt
  • ½ tsp black pepper

🥣 Instructions

1. Season

In a bowl, toss potatoes with:

  • Olive oil
  • Rosemary
  • Thyme
  • Garlic powder
  • Salt & pepper

2. Roast

Spread on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping once.
Potatoes should be golden and crispy.

  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, thinly sliced
  • ¼ cup sour cream
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill (or 1 tsp dried)
  • ½ tsp salt
  • ¼ tsp pepper

1. Make the dressing

Whisk together:

  • Sour cream
  • Mayo
  • Lemon juice
  • Dill
  • Salt & pepper

2. Combine

  • Add cucumber, tomatoes, and onion into the dressing.
  • Toss gently.
