1. Prepare the Chicken Mixture
- Finely dice chicken breast into very small cubes (¼ inch pieces).
- In a large bowl combine:
- diced chicken
- eggs
- mozzarella and cheddar
- mayo or sour cream
- flour
- garlic
- parsley
- salt, pepper, paprika
- Mix well until fully combined.
- Cover and refrigerate 20–30 minutes — this step helps the mix firm up so fritters hold their shape.
2. Cook the Fritters
- Heat 2–3 tbsp oil in a large skillet over medium heat.
- Scoop fritter mixture using a spoon or scoop (2–3 tbsp per fritter).
- Drop portions into skillet and gently flatten them with the spoon.
- Cook 3–4 minutes per side, until golden brown and chicken is fully cooked through.
- Transfer to a paper towel–lined plate.
3. Serve
Serve warm with your favorite dipping sauces.
