🌿🧀 Roasted Beet Blue Cheese Towers

⭐ Ingredients
For the Beets
- 3 medium beets, peeled and sliced into ¼-inch rounds
- 2 tbsp olive oil
- Salt & black pepper, to taste
For Assembly
- 4 oz (115 g) blue cheese (or goat cheese if preferred)
- 2–3 tbsp honey or balsamic glaze
- 2 tbsp chopped walnuts or pecans (optional but recommended)
- Fresh thyme or rosemary for garnish
🧑🍳 Instructions
1. Roast the Beets
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment.
- Toss beet slices with olive oil, salt, and pepper.
- Spread in a single layer.
- Roast 30–40 minutes, flipping once halfway through, until tender and lightly caramelized.
- Let cool slightly for easier stacking.
2. Prepare the Cheese
- Crumble or gently press the blue cheese into small discs to fit the beet slices.
- (If using goat cheese, you can slice into rounds.)
3. Assemble the Towers
For each tower:
- Place a roasted beet slice on a plate.
- Add a spoonful or slice of blue cheese.
- Add another beet slice on top.
- Repeat layers until you have 3–4 beet slices per tower.
- Drizzle with honey or balsamic glaze.
- Sprinkle chopped walnuts/pecans for crunch.
- Garnish with fresh thyme or rosemary.
4. Serve
Serve warm or at room temperature.
