- 4 large potatoes, peeled and sliced into 1/4-inch thick rounds
- 2 large onions, thinly sliced
- 1/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper (optional but recommended)
- 1 teaspoon garlic powder (optional)
- 1 teaspoon paprika (optional for color/flavor)
- Fresh parsley for garnish (optional)
🍽️ Instructions
1. Preheat the Oven
- Preheat oven to 425°F (220°C).
- Line a large baking sheet with parchment paper or lightly grease it.
2. Prep the Vegetables
- Place sliced potatoes and onions in a large mixing bowl.
- Add olive oil, salt, pepper, garlic powder, and paprika if using.
- Toss until everything is well coated.
3. Arrange on the Baking Sheet
- Spread potatoes and onions out in a single layer on the baking sheet.
- Overlapping will make them steam instead of crisp, so keep them spaced as well as possible.
4. Bake
- Bake for 20 minutes, then flip the potatoes and stir the onions.
- Continue baking for another 15–25 minutes, or until potatoes are golden brown and crispy on the edges.
Tip: If you want extra crispiness, broil for the last 2–3 minutes while watching closely.
5. Serve
- Sprinkle with fresh parsley if desired.
- Serve hot as a side dish with grilled meats, breakfast eggs, roasted chicken, or anything you enjoy.
