🥣 Cabbage Soup (Simple & Healthy)
Ingredients
1 large cabbage, chopped
2 small onions, diced
2 cans stewed tomatoes (14–15 oz each)
3 carrots, sliced
2 celery stalks, sliced
1 bell pepper, chopped (any color)
1–2 cloves garlic, minced
6–8 cups vegetable or chicken broth
1–2 tbsp olive oil (optional, for sautéing)
Salt and pepper to taste
Optional seasonings:
1 tsp paprika
1 tsp dried thyme
1–2 bay leaves
A pinch of chili flakes for heat
Instructions
Prep the vegetables Chop the cabbage, onions, carrots, celery, and bell pepper.
Sauté aromatics (optional for more flavor)
In a large pot, heat olive oil over medium heat.
Add onions and garlic; cook until softened (about 3–4 minutes).
Add vegetables & tomatoes
Add the carrots, celery, bell pepper, and cabbage.
Pour in the canned stewed tomatoes (with their juices).
Add broth & seasonings
Pour in enough broth to cover the vegetables.
Add salt, pepper, and any additional herbs/spices you like.
Stir well.
Simmer
Bring to a boil, then reduce heat to low.
Cover and simmer for 25–35 minutes , until vegetables are tender.
Taste & adjust seasoning Add more salt, pepper, or spices if needed.
Serving Suggestions
Enjoy as a light meal on its own
Add cooked chicken, beans, or rice for a heartier version
Serve with crusty bread
