Ingredients

  • 2 eggs

Instructions

1. Slice the Tomatoes

  • Slice green tomatoes into ¼-inch to ½-inch thick rounds.
  • Lightly sprinkle both sides with salt and let sit for 5 minutes to draw out moisture.
  • Pat dry with paper towels.

2. Prepare the Breading Stations

Set up three shallow bowls:

  1. Bowl 1: Flour, salt, pepper, and optional garlic powder/paprika
  2. Bowl 2: Whisk together eggs and milk
  3. Bowl 3: Mix cornmeal and breadcrumbs (or use 100% cornmeal if preferred)

3. Bread the Tomatoes

For each slice:
