Broccoli Rice Chicken & Cheese Casserole
📋 Ingredients
- 2 cups cooked chicken, shredded or diced
- 2 cups cooked rice (white or brown)
- 2 cups broccoli florets (fresh or frozen)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1½ cups shredded cheddar cheese, divided
- ½ cup milk (optional, for creamier sauce)
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp black pepper
- Salt to taste
- Optional topping: crushed Ritz crackers or breadcrumbs mixed with 2 tbsp melted butter
👩🍳 Instructions
1. Preheat the oven
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish or similar casserole dish.
2. Prepare the broccoli
- Fresh broccoli: Steam for 3–4 minutes until just tender.
- Frozen broccoli: Thaw and drain excess water.
(Avoid overcooking; it will continue cooking in the oven.)
3. Mix the casserole
In a large bowl, combine:
- Cream of chicken soup
- Sour cream
- 1 cup shredded cheddar cheese
- Milk (if using)
- Garlic powder
- Onion powder
- Salt & pepper
Whisk until smooth.
Add in:
- Cooked chicken
- Cooked rice
- Broccoli
Mix everything until fully combined.
4. Assemble
- Spread the mixture evenly into your greased casserole dish.
- Sprinkle the remaining ½ cup cheddar cheese on top.
- Add optional cracker/breadcrumb topping if desired.
5. Bake
- Bake 25–30 minutes, or until the casserole is hot and bubbly and the top is golden.
6. Serve
Let it rest for 5 minutes, then scoop and serve!
