Ingredients:

  • 500 g all-purpose flour (about 4 cups)
  • 1 tbsp active dry yeast
  • 1 tsp sugar
  • ½ tsp salt
  • Warm water (as needed for the dough)
  • Oil for frying

Instructions:

1. Prepare the dough

  • In a large bowl, mix flour + salt + sugar + yeast.
  • Add warm water little by little and start mixing with your hand.
  • The dough should be very soft and sticky (similar to pancake batter but thicker).
  • Knead well for 10 minutes until the dough becomes smooth and stretchy.

2. Let it rise

  • Cover the dough and let it rise for 45 minutes to 1 hour, until doubled in size.

3. Shape the sfenj

  • Wet your hands with water, take a small ball of dough,
  • Use your fingers to make a hole in the middle (donut shape).
  • Place them on a greased surface to rest.

4. Frying

  • Heat oil in a deep pan over medium heat.
  • Fry the sfenj one by one, flipping until golden on both sides.
  • The oil should be medium-hot so they puff up without absorbing too much oil.

5. Serve

  • Serve hot with honey or powdered sugar.
  • Crispy on the outside, airy on the inside!
