Ingredients

For the Biscuits

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar (optional but traditional in the South)
  • ½ cup (1 stick) cold unsalted butter, cubed
  • ¾–1 cup cold buttermilk (or regular milk with 1 tsp lemon juice)

For the Sausage Filling

  • 1 pound breakfast sausage (mild or spicy)
  • Optional: ½ tsp black pepper
  • Optional: ½ tsp sage or smoked paprika

1. Cook the Sausage

  1. In a skillet over medium heat, cook sausage until browned.
  2. Break into crumbles and cook until no pink remains.
  3. Drain excess grease and set aside to cool slightly.

2. Preheat the Oven

  • Preheat oven to 425°F (220°C).
  • Line a baking sheet with parchment paper.

3. Make the Biscuit Dough

  1. In a bowl, whisk flour, baking powder, salt, and sugar.
  2. Add cold butter and cut it into the flour using a pastry cutter or your fingers
    until it forms pea-sized crumbs.
  3. Pour in cold buttermilk and mix gently until dough comes together.
    (Don’t over-mix — biscuits stay fluffier when handled lightly!)

4. Shape the Biscuits

  1. Turn the dough onto a floured surface.
  2. Pat or roll it to about ½-inch thickness.
  3. Cut out biscuits using a biscuit cutter or glass.
  4. Optional: For sausage-filled biscuits, do this:
    • Flatten each biscuit dough circle.
    • Add 1–2 tbsp sausage in the center.
    • Fold dough over sausage and pinch edges to seal.
    • Shape into a biscuit again.

(If you prefer, you can also bake plain biscuits and serve sausage on top—your choice!)


5. Bake

  • Arrange biscuits on the baking sheet, touching slightly for soft sides.
  • Bake 12–15 minutes, or until golden on top.

6. Serve
