🧈 Southern Sausage Biscuits
Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp sugar (optional but traditional in the South)
- ½ cup (1 stick) cold unsalted butter, cubed
- ¾–1 cup cold buttermilk (or regular milk with 1 tsp lemon juice)
For the Sausage Filling
- 1 pound breakfast sausage (mild or spicy)
- Optional: ½ tsp black pepper
- Optional: ½ tsp sage or smoked paprika
👩🍳 Instructions
1. Cook the Sausage
- In a skillet over medium heat, cook sausage until browned.
- Break into crumbles and cook until no pink remains.
- Drain excess grease and set aside to cool slightly.
2. Preheat the Oven
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper.
3. Make the Biscuit Dough
- In a bowl, whisk flour, baking powder, salt, and sugar.
- Add cold butter and cut it into the flour using a pastry cutter or your fingers
until it forms pea-sized crumbs. - Pour in cold buttermilk and mix gently until dough comes together.
(Don’t over-mix — biscuits stay fluffier when handled lightly!)
4. Shape the Biscuits
- Turn the dough onto a floured surface.
- Pat or roll it to about ½-inch thickness.
- Cut out biscuits using a biscuit cutter or glass.
- Optional: For sausage-filled biscuits, do this:
- Flatten each biscuit dough circle.
- Add 1–2 tbsp sausage in the center.
- Fold dough over sausage and pinch edges to seal.
- Shape into a biscuit again.
(If you prefer, you can also bake plain biscuits and serve sausage on top—your choice!)
5. Bake
- Arrange biscuits on the baking sheet, touching slightly for soft sides.
- Bake 12–15 minutes, or until golden on top.
6. Serve
Serve warm with:
- butter
- honey
- hot sauce
- or as classic sausage breakfast sandwiches
