- 1½ cups small pasta (ditalini, shells, elbows, etc.)
- 1 cup heavy cream (or half-and-half for lighter version)
- 2 cups fresh spinach or kale, chopped
- 1 tsp Italian seasoning
- ½ tsp paprika (optional)
- Salt & pepper to taste
- ½ cup grated Parmesan (for stirring in + topping)
👩🍳 Instructions
1. Brown the Sausage
- Heat a large pot over medium heat.
- Add the sausage and cook until browned, breaking it into crumbles.
- If needed, add olive oil. Drain excess grease if there’s too much.
2. Add Onion & Garlic
- Add diced onion and cook 3–4 minutes until soft.
- Stir in garlic and cook 30 seconds until fragrant.
3. Add Broth & Tomatoes
Pour in:
- chicken broth
- diced tomatoes (with juices)
- Italian seasoning
- paprika
- salt & pepper
Bring to a gentle boil.
4. Add Pasta
- Add pasta directly into the pot.
- Lower heat to medium and cook 8–12 minutes (depending on pasta type) until tender.
5. Make It Creamy
Stir in:
- heavy cream
- grated Parmesan
Simmer 2–3 minutes, but don’t boil hard (so the cream doesn’t split).
6. Add Greens
- Stir in spinach or kale.
- Cook 1–2 minutes until wilted.
7. Serve
Taste and adjust salt/pepper.
Serve topped with:
- extra Parmesan
- red pepper flakes
- fresh basil or parsley
Creamy, cozy, and full of flavor! 😍🍜
