Ingredients
For the Chicken
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt & black pepper, to taste
- 1 teaspoon Italian seasoning
- 4 cloves garlic, minced
For the Alfredo Sauce
- 2 tablespoons butter
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder (optional, for extra flavor)
- 1 tablespoon chopped fresh parsley (optional)
For the Pasta
- 12 oz linguine
- Salt (for pasta water)
Instructions
1. Cook the Linguine
- Bring a large pot of salted water to a boil.
- Add linguine and cook until al dente (about 9–11 minutes).
- Reserve ½ cup of pasta water, then drain and set aside.
2. Cook the Chicken
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
- Season chicken pieces with salt, pepper, and Italian seasoning.
- Add chicken to the pan in a single layer; cook 5–7 minutes until golden and fully cooked.
- Add minced garlic, sauté 1 minute until fragrant.
- Transfer chicken to a bowl and set aside.
3. Make the Alfredo Sauce
- In the same skillet, melt 2 tablespoons butter over medium heat.
- Pour in heavy cream and stir, bringing it to a gentle simmer.
- Reduce heat to low and slowly whisk in Parmesan cheese until melted and smooth.
- Season with salt, pepper, and garlic powder if using.
- If the sauce is too thick, stir in a splash of reserved pasta water.
4. Combine Everything
- Return the cooked chicken (with its juices) to the pan.
- Add the cooked linguine.
- Toss until everything is coated in the creamy Alfredo sauce.
- Simmer 1–2 minutes to marry the flavors.
- Garnish with parsley if desired.
Serve With
