Fluffy vanilla muffins dipped in melted butter and rolled in warm cinnamon sugar.


📝 INGREDIENTS

For the Muffins

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground nutmeg (optional but traditional for donut flavor)
  • 1 large egg
  • ¾ cup milk
  • ⅓ cup unsalted butter, melted
  • 1 tsp vanilla extract

For the Cinnamon Sugar Coating

  • ½ cup granulated sugar
  • 1–2 tsp ground cinnamon (to taste)
  • 4 tbsp unsalted butter, melted

🍳 INSTRUCTIONS

1. Preheat your oven

  • Heat to 375°F (190°C).
  • Line a muffin tin with liners or grease well.

2. Mix the dry ingredients

In a medium bowl, whisk together:

  • flour
  • sugar
  • baking powder
  • salt
  • nutmeg

3. Mix the wet ingredients

In another bowl, whisk:

  • egg
  • milk
  • melted butter
  • vanilla

4. Combine

  1. Pour the wet ingredients into the dry.
  2. Stir gently until just combined — don’t overmix.

5. Fill & bake

  1. Divide the batter into the muffin pan (about 12 muffins).
  2. Bake 15–18 minutes, until the tops are lightly golden and a toothpick comes out clean.
  3. Let muffins cool for 5 minutes in the pan, then transfer to a rack.

6. Make the cinnamon sugar coating

  1. Mix the sugar + cinnamon in a small bowl.
  2. Melt the butter in another bowl.

7. Dip & roll

  1. Dip the warm muffin tops in melted butter.
  2. Roll or sprinkle generously with cinnamon sugar.

(For extra sweetness or crunch, coat the entire muffin.)


🌟 OPTIONAL VARIATIONS

  • Filled donut muffins: Add a spoonful of jam inside before baking.
  • Chocolate version: Add ½ cup mini chocolate chips.
  • Brown butter: Replace melted butter with brown butter for richer flavor.
  • Mini donut muffins: Bake in a mini muffin pan for 10–11 minutes.
