1 lb sirloin steak (or ribeye/strip), cut into 1-inch cubes
1 tbsp olive oil
2 tbsp butter
4–5 cloves garlic, minced
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional, but great)
½ tsp dried thyme or Italian seasoning
Fresh parsley, chopped (optional garnish)
Instructions
Prep the steak Pat steak bites dry with paper towels (this helps them sear). Season with salt, pepper, paprika, and thyme.
Heat the pan Heat a large skillet (cast iron works best) over medium-high heat. Add olive oil.
Sear the steak bites Add steak in a single layer (don’t overcrowd). Sear for 2–3 minutes per side until nicely browned. Remove steak from pan and set aside.
Make it garlicky Reduce heat to medium. Add butter and minced garlic. Sauté for 30–45 seconds, just until fragrant (don’t burn the garlic).
Finish the steak Return steak bites to the pan. Toss in the garlic butter for 1–2 minutes until coated and cooked to your liking.
Serve immediately Garnish with fresh parsley if desired.
