Garlic Soy Glazed Bok Choy (Serves 3–4)
Ingredients
1½ lbs (700 g) bok choy (baby or regular)
2 tbsp vegetable oil or sesame oil
4–5 cloves garlic, minced
3 tbsp soy sauce (low-sodium preferred)
1 tbsp oyster sauce (optional but recommended)
1 tbsp honey or brown sugar
1 tsp rice vinegar or lemon juice
¼ cup water or vegetable broth
½ tsp cornstarch (optional, for thicker glaze)
¼ tsp black pepper
½ tsp sesame seeds (optional)
Red pepper flakes (optional)
Instructions
Prep the bok choy
Wash thoroughly. Slice in half lengthwise (or quarters if large). Pat dry.
Make the glaze
In a small bowl, whisk together:
Soy sauce
Oyster sauce
Honey
Vinegar
Water/broth
Cornstarch (if using)
Sauté garlic
Heat oil in a large skillet over medium heat.
Add garlic and cook 30 seconds until fragrant (do not brown).
Cook bok choy
Place bok choy cut-side down.
Cook 2–3 minutes until lightly charred.
Glaze & steam
Pour in sauce.
Cover and cook 2–3 minutes, until stems are tender.
Finish
Uncover and simmer 1–2 minutes until sauce thickens and coats bok choy.
Sprinkle with pepper, sesame seeds, and red pepper flakes.
Pro Tips
Baby bok choy cooks faster and stays tender
Don’t overcrowd the pan — cook in batches if needed
Add mushrooms or tofu for a complete dish
Variations
Vegan: omit oyster sauce, add extra soy
Spicy: add chili crisp or sriracha
Ginger garlic: add 1 tsp fresh grated ginger
