Crispy Salmon Patties

Crispy Salmon Patties
Golden on the outside, tender inside—perfect for a quick meal or appetizer.
Ingredients
1 (14–15 oz) can salmon, drained
½ cup breadcrumbs (plain or seasoned)
1 large egg
¼ cup finely chopped onion
2 tbsp mayonnaise
1 tbsp lemon juice
½ tsp salt (or to taste)
½ tsp black pepper
2–3 tbsp oil for frying (vegetable or canola)
Instructions

  • Prepare the Salmon
    Drain the canned salmon well.
Remove skin and large bones if desired (small bones are edible and soft).
Flake salmon into a medium bowl.
  • Mix the Patty Base
    Add to the bowl:
    Breadcrumbs
    Egg
    Onion
    Mayonnaise
    Lemon juice
    Salt and pepper
    Mix gently until just combined.
(If mixture feels too wet, add 1–2 tbsp more breadcrumbs.)
  • Form the Patties
Shape mixture into 6–8 patties, about ½-inch thick.
Place on a plate and chill for 10 minutes if time allows (helps them hold together).
  • Fry the Patties
Heat oil in a skillet over medium heat.
Once oil is hot, add patties (do not overcrowd).
Cook 3–4 minutes per side, until golden brown and crispy.
Remove and drain on paper towels.
