Roasted Sausage, Potatoes & Peppers

Ingredients
- 6–8 sausages (pork, chicken, or beef)
- 1½ lbs baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow or red onion, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (sweet or smoked)
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano or thyme
- Fresh parsley, chopped (for garnish – optional)
Instructions
- Preheat the oven
Set oven to 400°F (200°C). - Prepare the vegetables
In a large bowl, add potatoes, bell pepper, and onion.
Drizzle with olive oil and season with salt, pepper, paprika, garlic powder, and oregano. Toss well. - Assemble the tray
Spread the vegetables evenly on a baking tray.
Nestle the sausages on top (you can lightly brush them with oil for extra browning). - Roast
Bake for 35–40 minutes, turning sausages and stirring veggies halfway through, until:- Potatoes are golden and tender

- Finish & serve
