Instructions
Season the beef with salt and black pepper. Place it in the slow cooker, then add baby potatoes, carrots, sliced onion, and garlic around the meat. Sprinkle over the onion soup mix or seasoning, add fresh herbs, and pour in beef broth until it reaches halfway up the roast. Cook on LOW for 8–9 hours until the beef is very tender.

Boil the potatoes for the mash until soft. Drain, then mash with butter, warm milk, and salt until smooth and creamy.

Serve the slow-cooked beef over the mash, add vegetables on top, and spoon the savory gravy over everything.
