Beef Stroganoff with Noodles – A Comforting, Hearty Meal
Introduction

Ingredients
For the Stroganoff
- 1 lb (450 g) beef sirloin or tenderloin, thinly sliced
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 8 oz (225 g) mushrooms, sliced (cremini or button)
- 1 tbsp flour (for thickening)
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- ½ cup sour cream
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
For the Noodles
- 10–12 oz egg noodles
- 1 tbsp butter
- Salt, to taste
Instructions
1. Prepare the Noodles
- Bring a large pot of salted water to a boil.
- Add egg noodles and cook according to package instructions (usually 7–9 minutes).
- Drain, toss with 1 tbsp butter, and set aside.
2. Cook the Beef
- Season sliced beef with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add beef in a single layer and quickly sear (1–2 minutes per side).
- Remove beef from pan and set aside—don’t overcook; it will finish in the sauce.
3. Make the Sauce
- In the same skillet, melt 2 tbsp butter.
- Add onions and cook until softened, about 3–4 minutes.
- Add garlic and cook for 30 seconds.
- Add mushrooms and cook until browned and moisture evaporates (5–7 minutes).
- Sprinkle flour over the mixture and stir for 1 minute to cook out the raw taste.
- Pour in beef broth while stirring; simmer until slightly thickened.
- Add Worcestershire sauce and Dijon mustard.
4. Finish the Stroganoff
- Return the seared beef and its juices to the pan.
- Reduce heat to low and stir in the sour cream.
- Simmer gently without boiling for 2–3 minutes until warmed through.
- Taste and adjust seasoning with salt and pepper.
5. Serve
- Spoon the creamy beef stroganoff over warm buttered egg noodles.
- Garnish with fresh parsley.
